Someone requested recipes at one point so I thought I would share one we love. Great way to sneak in some veggies - and its really is delicious. (PS - Dont expect a lot of recipes from us here at PAHM - LOL)
This recipe make TWO loaves.
-2 8x4 inch pans
-3 cups of all purpose flour
-1 teaspoon of salt
-1 teaspoon of baking soda
-1 teaspoon of baking powder
-3 teaspoons of ground cinnamon
-3 eggs
-1 cup vegetable oil (I use more like 3/4 cup)
- 1 3/4 cups of sugar
-3 teaspoons of vanilla extract
- 2 heaping cups of finely grated zucchini
OR
-1 heaping cup of grated zucchini and 1 heaping cup of grated squash (this is what I use)
Grease pans and preheat over to 325...sift flour, salt, baking powder, soda, and cinnamon together in a bowl...beat eggs, oil, vanilla, and sugar in a separate bowl (you can use a whisk or an electric beater...I used a whisk)...add sifted ingredients and beat well...stir in zucchini until well combined...pour batter into pans...bake 40-60 minutes...or until a tester inserted in the center comes out clean. Let cool completely. It can be frozen if needed.
(I have also added coco powder before and it was yummy - you can sue carrots, too)
